Department Annenberg Salary Grade 016 Union 21 - Hotel, Rest Emp Int Loc 26 Duties & Responsibilities Follows directions and assignments as designated by the person in charge. Reads and follows standardized recipes in the preparation of pares and cooks meats, fish, poultry, gravies, soups, vegetables, and other foods according to proper preparation methods when necessary. Fries, grills, sautés, bakes and steams food products as needed. Prepares vegetables for use in casseroles, stir fry, etc. Heats soups, sauces and prepared products ensuring product has reached appropriate temperature. Carves or slices meat for service both in back-of-house setting and at carving stations in front-of-house setting when necessary. Slices vegetables, meat, cheese and bread for platters used during in-house functions, may assemble platters. Assists culinary team in the preparation of in-house catered functions where needed. Refrigerates, labels and properly stores food according to HACCP procedures. Maintains a clean and orderly work area. Accurately records portion amount of food used during meals on service records when necessary. Contributes to unit effort by performing related duties as k schedule will vary based on the academic schedule of the individual work unit. As part of the initial application process, all external candidates are also required to complete a customer service and/or culinary questionnaire. External candidates must complete this form at the Harvard University Dining Services (HUDS) Human Resources Office at 65 Winthrop Street, Cambridge, MA. Hours are Monday to Friday from 9:00am - 4:00pm. Basic Qualifications Must be able to read, write and understand t be able to routinely lift 50 lbs. without restrictions. Additional Qualifications Must have one to two years experience in the culinary field and quantity food preparation. Must have knife skills necessary to perform the job. ServSafe certification recommended. Must be able to work independently and multi-task when necessary. Must act in a respectful and professional manner, always promoting a positive relationship between HUDS and all guests. Must be neat in appearance and comply with proper dress code as designated by HUDS. Works cooperatively with all members of the team. Must comply with State of Massachusetts and HUDS' "Food Employee Illness Policy". Responsible for maintaining sanitation standards in compliance with city and state laws, Harvard Environmental Health and Safety regulations, departmental and HACCP policies.
